Usually in a kitchen you will find reccessed lighting balanced out throughout the ceiling producing light from above for specific task areas.  Undecabinet lighting eliminates shadows from the overhead reccessed lighting while working on counter space task areas.  It also adds a nice soft light when illuminated by themselves without the overhead reccessed lights on, a little more romantic type setting for the kitchen.
